Kale, Mushroom and Broccoli Burgers

Kale Broccoli and Mushroom Burger with Spicy Mustard Sauce

 

These are delicious! Taylor and I loved the Kale and brussels sprouts burgers I made awhile back, so I decided to give another go to our green burger! The spicy mustard barbeque sauce makes this meal! You can get the recipe for the mustard here.

Kale Broccoli and Mushroom Burger with Spicy Mustard Sauce

Recipe makes: About 8 small patties | 4 normal patties

2 cups chopped kale
1 cup chopped broccoli
1/2 cup chopped mushroom
1 cup crushed Ritz crackers
1 tbsp chopped onion
1 egg
Pepper, salt and spices to taste
Bowl of flour
Vegetable Oil

Preheat skillet to a low heat. Add vegetable oil.

Mix kale, broccoli, mushroom, crackers, onion, egg and spices together in a bowl. Make sure all the ingredients are coated with egg. Let sit for a few minutes so the mixture can begin to meld together.

Using your hands, form small parts of the mixture into patties. Sprinkle/dip the patty into flour on both sides. Carefully add the patty in the skillet to begin browning. Be careful not to move/mash them as they are quite delicate!

After browning both sides, set aside to cool. Make the spicy mustard sauce and enjoy with whatever you like! We used toast and cheese.

Our life in the UK has become much easier as we’ve settled into a semi-routine, discovered our favorite cafes and met a couple people. While we have become more comfortable, there are still quite a few issues we are working to sort out, so there is still a feeling of restlessness between us.

Canterbury is a gorgeous city with lovely parks and historical buildings at every turn. We are still in awe that we live here! Canterbury is actually a very tourist/university-driven location, so us being Americans don’t cause us to stick out at all. Taylor has met Canadian, French, German and Bohemian students and teachers. Go to any cafe and the possibility of hearing at least two or three different languages around you is quite high.

Of course living in a tourist and college town does have its downfalls we will need to acclimate ourselves to, such as having droves of people visit the city centre each weekend and the normally peaceful evenings turning into loud nights each Saturday due to students.

We are currently continuing to live in our tiny flat, however we reserved a flat that will hopefully be ours very soon. Waiting on hearing back from the realtor is making us even more restless, but the flat currently has people living in it that aren’t due to leave until the 16th of October so we just need to be patient.

Thankfully our money situation has improved, as well.  We were able to sign up for a UK bank and received a debit card recently, although we’re being sparse with our money as we  want to have as much as possible in the bank ready to be delivered to the new flat if we are able to obtain it.

We have slowed down on being ‘touristy’ to save money, although we did visit the Canterbury Castle recently. We plan on visiting the gorgeous Canterbury Cathedral that I love snagging photos of, we just haven’t been able to make time to visit.

The Fun Stuff:

We’ve started drinking A LOT more tea. At cafes you get an entire pot of tea for half the price of a coffee, and tea bags are much cheaper. I love tea!

Though some groceries offer an ‘American’ section, we’ve yet to find one, although Uncle Ben’s ready-made rice meals are very popular over here.

Eating at restaurants is very different. We have had several meals where our waiter wouldn’t come back to our table! We would sit there not eating for 5,10,15 minutes to no avail. At first it was surprising and confusing until we realized that, unlike in America, waiters are not supposed to bring the check (or bill) until they are waved over. We are quite used to being handed the bill without asking for it, but it is considered rude to do that over here.

Slang and Phrases
‘You’re having a laugh’ -meaning – ‘You must be joking’
‘That’s not bad’ -meaning- ‘That’s good’
‘Quite good’ -meaning- ‘A bit disappointing’
‘Takeaway’-meaning-‘Take out’, ‘to go’, or ‘delivered’
‘Go to hospital’ – a normal phrase used instead saying ‘go to THE hospital’
‘Watch the football’ – as opposed to ‘watch football’ (without ‘the’)–and of course football is soccer
‘Redneck’ – they think it means anyone from the South!

Brussels Sprouts, Potato & Egg Hash

step5astep1 step2a I have an issue with not knowing how to cook. Anything I can successfully cook in one pan is going to be my best bet for dinner. This dish was actually really delicious (and a first for me to attempt). I made some errors that I should have known better than to make, but all in all it was a great meal! I think it’s supposed to be a breakfast, but I’ve been pretty honest about my love of breakfast-for-dinner dishes. I should have cooked the potatoes before throwing in the vegetables, and I used too much oil in my pan. Other than that, this was great!

What I Used:

  • Brussels Sprouts
  • Potato
  • Kale
  • Eggs 1 1/2 tablespoons  of red wine vinegar
  • Onion/Garlic/Salt/Pepper

Telling A Story: The Reception

 

My Mamaw, who passed away just four months after our wedding from ovarion cancer got to be at the wedding. Two nurses were able to take her from the nursing home to the wedding, which I am so glad for! It was really special having her there.

I loved the photos from the loft above the reception area.

I loved our dessert bar! The groom’s cake was a peanut butter cake, the wedding cake was lemon cream. My step mom also made some awesome cupcakes. Chocolate coffee, almond, and lemon cupcake. Amazing!

Oh, and our cake topper. 🙂

Ok, this is the LAST post about my birthday!

I left you with the notion that my birthday was a cold and rainy mess of  a day, neither good or bad or special. And up to that point—it was! After my night class, however, I drove to Applebee’s and my dad drives up next to my car and my sister parks her car on the other side of me! This was definitely a surprise—I thought it was going to be me and my mom, but she invited the whole family! This made me happy, of course! I got to spend my birthday with mom, dad, step-mom and all of my brothers and sisters!

And I guess the ‘birthday’ doesn’t end until midnight, and Taylor proved that to be true by surprising me at my door with roses and a home made cake at 10:30 pm!! He could only stay until 11, but I ate cake at 12 so I celebrated all day!

So, ‘a rose is a rose is a rose…’ yes, my birthday was cold, rainy, and mundane at first, but it was also full of facebook and e-mail well wishes, happy birthday text messages, and family and fiancee surprises. It was what it was. =) I am thankful for a great day—and a great life given to me by God. Happy life to me.

November 5th: Donut Day

Wow, I have not been responsible at all about keeping up with this blog! November celebrations have been going on ALL WEEK yet I have not posted about them at all! My apologies! Let’s get back on track!

November 2nd: I did post about this one but I forgot to tell you that I had cookies and I decorated them in blue icing to celebrate Cookie Monster’s birthday. I didn’t have any, though—I gave them to Taylor and his roommates!

November 3rd was Sandwich Day and I am so not happy to say that I didn’t even celebrate today! The easiest possible day to celebrate….I just didn’t have time! I had some sandwich meat and chips for a quick lunch—I was so busy!

November 4th was Candy Day. Now, this was an easy one, too! Just buy candy, right? Right! But on top of that I also found Taylor some Axe Body and hair products and they were named “Chocolate.” So, I definitely gave that to him (as well as some candy) so he could celebrate this holiday, too!

November 5th: Donut Day

TODAY is Donut Day! (This week has been primarily about unhealthy food, eh?) Well, I wasn’t interested in going out to buy some fresh donuts this morning, plus I didn’t have any time to do that so vending machine donuts at work were just as great!

It’s November and this month is FULL of fun holidays and birthdays and I’m going to celebrate a different weird and fun holiday everyday this month and post it on this blog!

Cookie Monster is a fictional Muppet character on the children’s television show Sesame Street. He is best known for his voracious appetitehowever, as his name suggests, his preferred food is cookies. Chocolate chip cookies are his favorite kind; oatmeal cookies are his second favorite. In a song in 2004, Cookie Monster revealed that, before he ate his first cookie, he believes his name was Sid. and his famous eating phrases: “Me want cookie!”, “Me eat cookie!”, and “Om Nom nom nom” (said through a mouth full of food). First Week of Fall Semester

I had an extremely interesting, emotional roller coaster kind of first week of fall semester!

I started my Monday morning at a very early 8 am–I had a very long free time since my first class didn’t start until 1 PM. I had a really great morning–Coffee, strawberry strudel, yoga….

Well, the first surprise of the Monday happened when I showed up for my class and the instructor (who is also my advisor) informs me that I can’t take that class until I take the first part of it! So, I spent my class period at my mom’s office and changing my schedule–or, well, dropping a class—so my Mondays and Wednesdays are open, now!

After that excitement, I head back to my dorm and I’m stopped by my boss’s boss (I work at the school as a student worker). She gives me a short version of a story that basically leaves me with this: “You need to choose another job to be transferred to.” Very confused, I promptly head over to my boss to see if she can straighten out my, well, confusion. She informs me she was kind of left out of the decision but she was guessing it had something to do with me not planning student activities like I should. Hmmmm…so of course I rush back over to my mom to vent–and see if her department has a student worker opening (they don’t)–and then also head over to another department who would potentially ‘take me in.’ Because she likes my design work, she would love to hire me–just one problem: she has no budget! So I’m frantically trying to put these pieces together: I’m being transferred, I wasn’t doing my work, Nobody can take me in: ding, ding, ding: that must mean I’m fired!

Anyway, for the next day and half I sort of mope around thinking I’m fired. Tuesday was bittersweet because of this–it was good finally going to two of my classes but, hello–I didn’t have a job! Tuesday night was great because me and Tay went to Applebee’s where we just enjoyed catching up on the first two days of class.

Wednesday morning was a fun one: I got coined by the TSTC President! It’s not much, but my mom was telling me that the military coined people for good deeds and, because the President was in the military, he wanted to also have a coin to give people. So I guess it’s sort of an honor, for all the designs I did for the school. I was also informed by my boss that I wasn’t fired! It’s still very hard to explain, but the main thing is that I wasn’t fired. Whew! Just a miscommunication. More info. on my ‘coining’ here:

Thursday: Well, both of my classes were cancelled. hah
Friday: I have a class with Clifton! He’s mine and Tay’s friend from Joe Bucks (of course we know him from school & his church too!) haha…I’m glad it was the first class day and nothing majorly important was going on…it was kind of awkward watching him doze off…I’m going to have to draw on him next time.

Yes, We’re at Joe Bucks Coffee Shop again! Taylor and I have been addicted to the food and coffee all summer, but this week marks the end of our summer lunch dates…once fall semester starts neither one of us will have time to go! 😦

It’s been fun though, hanging out almost every single day, getting to see our friend Clifton, plus just knowing all the workers there! haha…I love saying “i’ll take my usual’. I know…a small, but still great, reward for investing way too much money in this place!

Unfortunately, today I BROKE a coffee cup…ugh…very awkward, but they were nice about it. I was moving my laptop back so I could eat and I pushed the coffee cup full of sugar packets onto the floor. Sigh. Oh well…

I feel better now that I’m frequently posting blogs…I’m sure they’ll get more and more interesting…haha! And this one particular blog is basically pointless…I just wanted to post some photos of Taylor and me.
