Kale, Mushroom and Broccoli Burgers

Kale Broccoli and Mushroom Burger with Spicy Mustard Sauce

 

These are delicious! Taylor and I loved the Kale and brussels sprouts burgers I made awhile back, so I decided to give another go to our green burger! The spicy mustard barbeque sauce makes this meal! You can get the recipe for the mustard here.

Kale Broccoli and Mushroom Burger with Spicy Mustard Sauce

Recipe makes: About 8 small patties | 4 normal patties

2 cups chopped kale
1 cup chopped broccoli
1/2 cup chopped mushroom
1 cup crushed Ritz crackers
1 tbsp chopped onion
1 egg
Pepper, salt and spices to taste
Bowl of flour
Vegetable Oil

Preheat skillet to a low heat. Add vegetable oil.

Mix kale, broccoli, mushroom, crackers, onion, egg and spices together in a bowl. Make sure all the ingredients are coated with egg. Let sit for a few minutes so the mixture can begin to meld together.

Using your hands, form small parts of the mixture into patties. Sprinkle/dip the patty into flour on both sides. Carefully add the patty in the skillet to begin browning. Be careful not to move/mash them as they are quite delicate!

After browning both sides, set aside to cool. Make the spicy mustard sauce and enjoy with whatever you like! We used toast and cheese.

Ranch & Gravy Baked Potato

My husband and I have been in such a rut. We’ve gone out to eat more often than not the past two weeks. We blame it on stress or feeling uninspired, but at this point, it’s really just laziness.

We finally got fed up with ourselves and decided to start cooking again, but with a condition: to force ourselves to use up the food we already had in our kitchen. It’s going to get really interesting (or we’re going to give up and go to the grocery store and/or get some fast food).

We are officially out of meat. But, we bought a ton of vegetables last time we were at the store, so maybe we’ll get creative.

Speaking of creative…Adding ranch mix to anything makes it so much better, to me. I can’t get over this strange baked potato recipe, because it sounds so wrong but it was so delicious. I added roasted brussels sprouts and roasted corn as sides.

What’s funny is, I’ve been getting so creative (compared to my usual shallow cooking skills) but I’ve yet to break out of my breakfast, mexican or baked potato zone.

Ingredients | Breakfast Burrito

breakfastRunning low on groceries and imagination, me and my husband decided to just throw a bunch of ingredients in with our eggs.

We ended up using eggs, tuna, turkey, mixed green lettuce and cheese. And of course topped off with salsa and sour cream.

Surprisingly, it was delicious. (The tuna had me second-guessing for awhile).

Is there such a thing as eating too many eggs? I could eat breakfast for dinner every night and be perfectly fine.

Homemade BBQ Chicken Baked Potato

Thanks to Pinterest, I was able to find an easy recipe for tonight’s dinner. There are some alterations, since I didn’t feel like going to the store for the exact ingredients. All in all, it was a great dinner and really fast and easy. The original recipe for the BBQ chicken baked potato is here. 

In my kitchen, I had potatoes, left over shredded chicken, and the toppings. I didn’t have any barbeque sauce. Luckily, I had (almost) all the ingredients to make the homemade barbeque sauce.

Making the sauce added about 20 minutes to the prep time. But that was the only work I did, so after the potato was baked (in an hour) it was ready to eat!
